After i140 you can switch without giving up your priority number. Your new firm has to be willing to continue the process though.

Priority date for which country you are talking about? For nov 2019 india country u will have to wait min 30 years from now on
I would wait for the actual card and then switch. Keep in mind that during the naturalization interview they will ask you why you switched companies so fast, because there is a chance that you used your employer as a way to get a GC.
Then some people will be stuck for a life time

Affecting is a difficult term. Your GC will always be affected in some way. If you stay in the current firm for 6 months after your i140 is approved, then your current firm cannot redact the application(most usually never do, 6 months or not). At which point you are safe to switch. However, your new firm should be willing to also file your GC, and in that process they will have to redo your LCA and perm. Once they do the perm, you will get your old priority date. But it does affect your perm, right? If they are not willing to extend your GC, then again you are affected.
