Why tech startups these days hire so many engineers?

Take Airbnb, Uber/Lyft, WeWork, Instagram as example, these are not super technical products IMO. The frontends/client apps can totally be done by a 20 people team to build from scratch, and the backends may need another 20-30 engineers to scale the service or do some ML. Add 20 more engineers for internal tools and other stuff. i cannot think of a reason why they need hundreds of smart engineers, what are they working on?
