though I've got some stellar work experience, I'm getting offers well below what I'm worth. The only things I can control that contribute to this are my resumes, but I'm absolutely terrible at writing them!

There are resume workshops out there that you can take.
If you've started conducting interviews, then you can also look at other applicant resumes. Most of them are pretty forgettable.
I'm curious in what way yours is worse than the status quo.
