Many people on LinkedIn who work at YouTube have “YouTube” as their employer as opposed to Google, which I find weird since Google owns YouTube. Inside Google, is there any difference between people working at YouTube vs say something like Google Cloud in terms of refreshers, career growth and moving between teams?

No, it's just an org within google and your work contract is with google. They like to keep youtube externally as a distinct brand though to the point that a common person has no clue that it's google
YouTube to google is like Instagram to fb. Employee could be transferred between two groups easily. Not like LinkedIn and ms
