I have just got I-485 interview date but I have recently been laid off. I currently
have no job offer.
1. Can I call USCIS to change interview date? What reason I will tell them for delaying execuse?
Or
2. Will I face interview without Employee verification letter and not telling that I am unemployed unless explicitly asked?
Any suggestions?

Next best is to work elsewhere and update your i140 to the new company but that's tougher, especially on OPT.
After that you probably have to leave the US and cancel the i485 application. Do not lie to USCIS, that can result in you being permanently banned from the US.
What job role and city? Why are you having so much trouble finding a new team? Loads of teams at Amazon are hiring for most roles.
But at the time OP last entered he had not applied for GC. So that was fine. And there is no harm in applying while in the US on that status.
But if OP leaves US now he will not be able to come back in on his OPT or any other non dual intent visa, not even a tourist visa, because now he has expressed immigrant intent.
So with a non dual intent visa you need the whole process to complete before the visa renewal and you have to stay inside the US the whole time.
