Is it true that nearly everything at Stripe is in Ruby? Any plans to migrate to other languages? I’m thinking about applying but don’t love working in Ruby, primarily because I’ve seen some really bad Ruby code bases. Certain teams to target or avoid? ❤️ Thank you! ❤️

Some teams use Scala and Golang, but most use Ruby. There's an effort underway to rewrite some of the Ruby code in Java, and some new code is being written in Java too. A lot of the Ruby code at Stripe is remarkably bad.
Any specific teams to target or avoid?
TBH if code quality is high on your list of requirements for your next company, then Stripe might not be the best fit for you.
I think Stripe Ruby is a little bit better than what you expect because of Sorbet.
My team uses Golang but I think the IDE support with Ruby is as good as Java
