I wanted to created a quick and scalable website. options are Django, Ruby, etc I also want to choose a stack which will be easier from mobile perspective
I personally dont like ruby. I would do just a MERN stack tbh

Springboot is a bit of steeper learning curve if you are absolutely new , however, it's all worth it , once you get the hang of it.

quick & scalable : use kubernetes and containers frontend: react is the best option as far as I know backend: it's pretty much the same, depending on your taste (nodejs, python, java, whatever) db layer: that's application specific. For SQL I would say postgres, otherwise you have a wide choice depending on what you need for "scalability" (cassandra, kafka, etc..)
