They did not ask you about your immigration details several weeks into the offer because they likely guessed you WOULD need a visa, so it was a given, and a non sequitur.
However, for candidates (experienced or not) who are recruited from WITHIN the US, this is one of the FIRST things they have to answer.
Surprised you are finding it hard to believe SO many first person accounts, ESPECIALLY when you haven't gone through the same process yourself.
What if u dont find the same kind of job later?
The only worry about H1B is getting fired. But then, big tech dont use such tactics.
Again, I agree with you when you say that you always have a choice.
