Kaiser Permanente is actually pretty good in the areas you mention. I hit pto hour cap, took 6 weeks off after my son was born and was nearly back at the cap when I left a year later. Add pension, 401k matching, and other factors and you have a pretty decent place if that's your primary focus. Just don't expect to jump up the chain, and your compensation will change minimally when you do advance. Most of the people I know who are still there are within 15% of the salary they came in with.

GE has unlimited time off and they don't track. Just make sure someone is covering for you ... I like it, downside is if you leave/terminate, you don't get "unused vacation"
yes I have worked at companies with unlimited PTO in the past, and there is always the downside of not getting unused vacation, but it makes you more disciplined about take time off knowing that there is no upside to it
