They recently took $5M of funding to scale. the role would lead their engineering team. they called me and asked me to make them an offer. unsure of what i should offer. Seattle area. current TC 250K

Write an iron clad contract no matter what TC you ask for.
What does it mean to have an iron clad employment contract? I ask because I am in the middle of a job search and didn’t know that changing an employment contract is even an option
You can write a job contract to protect yourself from expulsion, dilution, vesting schedule etc.
'10 million profitable SaaS revenue'... '5 million external funding to scale'... These 2 things don't add up. You sure they really profitable?
Why not? 10M in revenue, but profit could be minimal and they are looking to scale the business by hiring. This is a very common scenario.
When in doubt ask for 2x current TC.
