Impossible to verify? Ask detailed questions about said experience. A candidate who is full of shit can't give you details. A candidate who is honest can go into depth without buzzword bingo. Even if you don't understand the topic, a good interviewer can easily verify details on a resume and can judge someone's experience on things they aren't familiar with. (Read Elon Musk's interview on it.)
Double sided requires close inspection.
Single page is off to a good start.
