Why do hiring managers advertise their “Challenging projects”?

I see on Linkedin that almost all people try to attract applicants by saying “we have several challenging projects in our group”!
What is the point of that? The more challenging a project, the higher the risk of its failure! Of course you have the oppotunity to learn too! But only worth it if you would not be accountable for possible failure!
What do you think?

Point being your TC won’t grow if you don’t grow as an engineer. And working on challenging problems is the best way to do it.
Most companies don’t do anything if you fail at your work as long as you are trying to learn and improve. Worst that can happen is you get “meets expectations” instead of “exceeds” during first perf cycle. There could be exceptions though. Amazon probably?
Also, accountability is healthy. Blaming and scapegoating are not.
Same as Saks Fifth Ave sells you the same thing which Kohl’s does
Just packaged in a better box with great customer experience
