is it ok to wear plain black Vans sneakers for a Software Engineer interview in Denver?

Your interviewer is unlikely to consider your shoes unless they are particularly loud, which black Vans aren't. Mostly they're considering your ability to get the job done.
Vans? I thought it's Merrell in Denver. Or at least allbirds.
