It’s a little complicated. They’re a contractor through a smaller and lesser known company and not supposed to put the clients name on their LinkedIn. The clients name would help get the next job though.
You can quit anytime you want after you get GC. There’s no restriction. I personally know people who have quit within 3 months.

Yes. Circumstances change. Make sure you can explain the officer why you changed. You get huge pay raise is good change of circumstance. Employer can fire you next day after you get GC and so can you. Staying for some period is to avoid raising eye brows. But any good immigration lawyer can handle this situations with ease. If you got it on September, I would say you are good. However, this is my personal opinion. Consult your lawyer.

It really depends. If you quit early and your employer/USCIS wants to hunt you, he'll be successful as probably you've presented in your green card documentation supplement J (Bone Fide Job Offer) meaning you are getting GC with intentions to stay in your job. So it's wiser/safer not to do so very early. There is no legal time either for how long you should stay, but 6 months should be ok.
Don't forget to update your SSN card, to remove work authorization limits.
You can quit whenever you want. I quit within 2 months.
