What are the more well known (non pharma) companies that are doing data science in healthcare and medicine? Examples of some companies I can think of are Verily Life Sciences, Haven Healthcare, Flatiron Health, etc.

Rally Health (part of United) and Oscar. You want to be connected with insurance for their data and power to influence without being inside them directly so they don't stifle forward thinking innovation.
Verily could be good too. Apple is also well positioned for this space.
    Good luck!

Apple is uniquely positioned- they've been approaching healthcare slowly but steadily. They have data generation from the Watch, data storage in their Health app which ingests electronic health records data,
and partnerships with companies like Aetna.

This article explains part of it.

They will push from wellness (internally being tested on Apple employees today) to preventative health leveraging data to the insurers.

You need data, and lots of it, so focus on health insurance companies as they're an interchange for a lot of data and have more ability to influence the system than a lot of other companies mentioned here. I've worked for Oscar and their infrastructure is well set up to do what you're looking to do 4 years ago, but they don't have the scale of data that a lot of legacy insurers have (my current role), and they're now getting it into the right places. I've also worked for vendors and you're too often stuck working with small/bad data and I don't recommend it.
