There are companies with some cutting edge tech products like Google Search, Amazon AWS, SpaceX, but startups don’t have to have the state of the art tech to be successful. What are some startups that are just very simple CRUD but are massively successful? I can think of Airbnb, Expedia, Ticketmaster

Almost every huge company looks like a simple CRUD from the facade. You must not have seen how the sausage is made in tech.
Don't lie it's just a bunch of PHP and MySQL backends
Is slashdot still alive?
I have worked for Expedia for 5 years and it's far from a CRUD app . It takes a lot more build a booking system for airlines and hotels than you think.
