I am not CS major but I do have some experience in statistical coding (example - running cohort analysis in R to understand what percentage of smokers suffered from cancer later in their life, and what percentage of people who suffered from cancer actually smoked regularly, while controlling for other factors), so I am good with data manipulation. I am looking for something that can provide basics of data structures and algorithms and take the way up to leetcode medium. Is interviewcamp.io a good option? Is it worth the money? Any other video resources or online courses?
Interviewcamp will not help with fundamentals. If you are in SF, checkout Bradfieldcs. They teach fundamentals in a crash course mode.

Interviewcamp.io will teach you the techniques to crack the interview. I would recommend this course to someone who has prior knowledge in DS/Algos or with CompSci background.

Your job sounds more like an analyst. Are you planning to switch to Software engineering position? Looking at the website you shared, it seems the only goal is to help you crack interviews and I expect you to have a basic foundation around DS and algorithms before jumping into anything like this. If your really want to build strong foundation and have time, take Sedgwick course on coursera.

If goal is to move to data science, you should be able to solve medium leet code programming questions. You will hardly get hard problems, so no need for interviewcamp. Also, start learning Python as R wont go long way in data science and most of the companies will ask you to code in Python unless you are going for statistical analyst role. Good and easy book for algorithms with a watered down understanding on algorithms is grokking algorithms. Check that out as well. Good luck.
