My wife doesn't eat beef and while we are here in US I want her to try the American steak. Is there some place in Seattle which makes lamb steaks?

I tried lamb shanks but it's not prepared like steak. Is there a name of a dish? Which is closer to steak?
Lamb chops are more a thing than lamb steaks. Would she eat American bison steaks?

Why exactly so you respect that? I understand vegetarians but the whole Kosher, Halal, No-cow thing is completely illogical and does not deserve respect.
I dont think you will find a restaurant that serves a steak cut of lamb. Shanks are common as someone pointed out in Mediterranean, especially Persian places. But you want a good ol' American steak but of lamb. Your best bed is to grill it yourself.
Look for rack of lamb. The equivalent of steak for lamb or pork is called chop, so look up lamb chops or rack of lamb on Yelp and you should find it.

Does she eat buffalo? Take her to Montana for a good buffalo steak or seattle with Lamb chops
Venison (deer) steaks is the answer. Honestly I find the lamb and goat too fatty and bland here in the US (compared to India for instance). Very rarely have I liked a lamb dish here in the Us. The other option is pork.
Talk to a butcher. Most of them will make or get special cuts for you. I’d just start at an actual butcher shop (like Rain Shadow), rather than your grocery. There are also Middle Eastern grocers, (like Goodies) that sell meat. They have a butcher there as well.
