From reading blind, I get the impression that FB is where to go if you want to move fast, break things, and get promoted. And G is where to go if you want to chill. If you want to make an impact, can you at G or is it just too bureaucratic?

What's wrong about move fast and break things? Life in the slow lane can be boring and tiring. Sure it helps to have a quiet weekend and take the occasional break, but if work turns into a mere job, what's the point?
to not have to apologize, embarass the team, disappoint users, and stay after work alone until it's dark outside to fix bugs
As a mantra it can come across as encouraging carelessness. It’s not always appropriate to move fast and break things. For example, when it comes to protecting user data and security... This doesn’t mean you should always move slow though.
If your TC is between 700K-900k, you will need L7 or more at Google. That’s very very difficult for external hires. What is your level at TS ? And YOE ?
At TS I am L7 equivalent. I have 15 YoE. My impression is L6 is what I would get at G given the high L7 bar. What does it take to get promoted to L7 at G?
Depends on the current role, not on YOE. I know of an 18 yoe who got in as L5
