I have some nice Uber RSUs stocked away. I plan on joining Airbnb or Robinhood and racking up a year or so of RSUs. And then moving onto the next pre-IPO startup over and over until the ride ends. Is this a thing people do? What am I missing?

It’s all about public perception. The public that will cause a successful IPO will see Robinhood as a moneymaker. Versus Snapchat - people saw that as pointless.
Robinhood competes with 4.95/trade brockers. There is not much of upside, other than userbase. Clients are usually price sensitive though
My manager did it with 4 companies in a row that went IPO or got aquired. If you are good and has right skills then you can do it. Assuming you want to be in a company 2-2.5 yrs to aquire meaningful equity you can do this for 10 yrs with 4 company and even if 2 of them pan out then you will still be rich. Go for it. I know someone that did this. He got kind of lucky by joining YouTube before Google acquired them and just going to the next pre ipo startup. He's doing extremely well now. Owns a house in SF and everything.
Might as well hit up a few casinos while you’re at it. Do you have some secret method of predicting which stocks will rise? Didn’t think so. Don’t get me wrong - collecting pre-IPO stock can hit big if you happen to guess right and get in and out at the same time, but it’s about as risky as gambling on a horse race.
Who said anything about stocks rising? This is about joining pre-IPO startups.
