I have been wanting to get a side hustle that I can earn some extra money towards the retirement. I found that I can be an online university instructor, work 2-3 hrs/week and make $2000 just replying student e-mails and checking homeworks. Does this kind of work conflict with FAANG companies’ rules of employment? Anyone out there that took such a side gig without friction to their main jobs?

Usually there’s no problem in having a side job as long as it does not directly compete with your employer’s mission. In your case you should be fine. These things are usually specified in your contract, but I would make a call to your HR just in case.
Not seen, not caught, and it's nothing illegal. Now imagine scaling that side gig with some automation or hiring helpers. Your additional revenue may well just go through the roof!
