Among my 6 interviews so far, I had only one trick question and everything was fairly straight forward like simple sorting, dynamic programming.. As an interviewer i only ask rather straight forward questions like random sampling or binary search tree, and most of people fails..
It's the nerves for many ppl! They can probably solve it at home and no pressure but mind goes blank when your livelihood is on the line

Totally agree. Even when questions aren't "hard" it appears these top companies are expecting unrealistic speed, i.e. someone who can crank out the code very quickly. Real-world software engineering is as much about architecture decisions, design, collaboration, best practices, documentation, etc. But it seems companies have given up on attempting to measure those other skills because they suck at it, choosing instead to focus on the only thing they can objectively measure.

Programming competitions focus on short term results, actual product building requires a different set of skills
I'd argue that many aspects of modern interviewing also focus on short term results. Did you leetcode enough? Have you seen a variation of the problem being asked?
