I know it's relatively easy to move to Berlin in tech, as companies sponsor visas pretty easily. How is it in Amsterdam? Can the companies there sponsor tech workers easily?

Booking sponsors a ton of people with Visa. It's easy.
I just found a job that would fit me in Amsterdam from booking.com. it says position is open to (EU residences only) looks like only their developer roles are open to people worldwide.
Booking sponsors for all roles in tech not just developer roles. Other departments do have some restrictions though.
Why do European offices pay less?

We have quite a big office in Amsterdam and sponsor visas worldwide. Many people move here outside EU. (AMS is the Uber EU engineering HQ). Visas take about 2 months to process. Also, when moving from abroad, you are usually qualified for tax breaks in your income tax (see the 30% ruling).

How's the pay scene there?
Both pay significantly less than most US cities, but I don't care. I just want to move to Europe.
Then move to Switzerland if you're ok with xenophobic people. Comp is on par with Bay area. Taxes are lower but prices are higher.
