i have recently moved from cisco to aws. its been little more than 6 months since my i140 approved and date i left cisco. anybody knows if i shall OR must ask amazon to redo my PERM process ? Also, do Amazon need to apply again for new I140 ? hoping someone would be in a same boat and have similar experience. also this question might be helpful to others. thanks!

Once your i140 is approved for more than 6 months you can do unlimited extensions and trnsfers with that same i140. You need new gc process only when the proirity date is current.

From the same company yes
You have to start the whole process again. Sooner you ask them and sooner they start better for you. You will be able to reclaim your priority date from your Cisco application (assuming that was your first application) by the time it comes for you to file your I-485.
Technically, the priority date retention occurs at the I-140 stage.
