Booking.com interview

I recently interviewed with booking.com in Amsterdam for SDE role and they asked what is my notice period in my current organisation. I told them 3 months. They told me it’s okay for them to wait that long. I wanted some advice on whether i should resign after getting the offer letter or shall i wait till my visa arrives? How long is the visa process anyway? Is there a possibility of rejection in issuing visa or taking more than 3 months to issue one?
