I applied to Amazon as a university grad SDE and recently got the offer but my letter says it’s from AWS which would be the company I would join. What does this mean? How did they decide to hire me on AWS if I applied as a generalist univ-grad SDE?
I do know what AWS is but how likely would it be that I work on EC2 vs internal tools there. As they do not tell me specific teams until I start

It's hard to say unless they tell you the exact team. You need to be very careful while selecting AWS teams. Few of them are really good and offer you new development work. Most of them have crazy oncall load and all you would be doing is solving tickets/customer contacts.
