It's just flour, salt, water, egg. If cooked it would just be lump of dough because there's no yeast. It would not be nearly as good without the noodle shape. Even with light seasoning and olive oil it is tasty and I can eat a big plate. So why does it become good in this shape?
Increased surface area for sauces and soups to stick to.
Its the condiment/spicer powder to the thin noodle equation that makes it yummier
Naan is basically the same ingredients in a different shape, and it still tastes amazing. Especially with salt, butter, and garlic.
Noodles are meh
I hate noodles with eggs. Not pure.

Most carbs taste good
Not for brown rice, black rice, and plain noodles (no seasoning). Ultimately for many carbs they need seasoning in order to taste good
