Got an offer from Facebook in the US, and they say they will apply for an O1 visa for me. Is there a reasonable chance they will fail to get it? I'm an Israeli citizen.

Approval rate is 80% or so mostly because lawyers are pretty good at not filing bogus cases. Still, 1 in 5 chance of denial isn't "rare". So you have good odds but no guarantee.
BTW, That's the overall rate for all applications nation wide. Facebook might (likely does) have even better odds owing to having good lawyers and good candidates. You should ask them what percentage of Facebook O1 applications succeed. But it won't be 100% so from a life planning point of view you should hope for the best but plan for the worst.
I know a friend who got his O1 approved last year but he doesn’t work for FB!! They reviewed his patents, LOR, impact of his job, SOP and other stuff and still got an RFE before getting an approval which was 2 months later. FYI: The LOR’s were given by senior directors, VP and other big shots! Good luck my friend!

If they offered, they must be pretty sure about your chances. What’s the harm in seeing how it plays out?
And always have a backup plan. Find a postdoc somewhere wouldn't harm either
