Admins/compliance/hr can
Yes. Your account managers can see all activity. But nobody has time to manage that. They usually have a roll off period too. I.e 30 days. Usually just wait for a reason to actually look if needed
Yes, everything
I need more information because the answer is it depends. Are you asking about your DMs in a Slack instance? If so, the answer is yes, depending on what kind of Slack instance you're on. If your company pays for Slack Grid for Enterprise, they can absolutely export and view everything you post there. See https://slack.com/help/articles/204897248-Guide-to-Slack-import-and-export-tools for details. As an aside, my advice just don't do personal stuff on your work computer. If your company has any sort of Acceptable Use Policy, chances are good that they can look at most of it, depending on your location. I was a Slack admin/infosec at a large company and the stupid things I witnessed employees doing on the company network are legion.
+1
While this could vary my company / org …managers typically cant see this; standard POLP policy. HR or Legal will only tap into this, if necessary for litigation purposes. That goes for ALL emails sent and received through your company emails, regardless of whether they were deleted or not.
They can if they want to, but it’s not something easily accessible. They’d have to have a reason to go looking.

No on the conversations and huddles. I'd have to check about apps. I'm pretty sure I can see installed apps but I'm not positive. I definitely can't see conversations.
