I recently downloaded a VPN on my phone for Netflix purposes, but I’m concerned my new employer will flag my phone (no specific concern here, just a preference to keep my head down so to speak). My iPhone is connected to my employers email, which required some settings configuration, but I can’t access any work-related documents so I’m not fully connected. Is there any specific, work-related downside to using a phone VPN in this case? Bonus points to those who work on teams qualified to answer this vs merely extrapolating TC 205k

Depends on what “some settings configuration” OP is referring to. If it involved something like installing MobileIron with device administrator permissions, the company can access a bunch of other stuff like location data.
I wouldn't install anything like that on my personal device. Most companies wont allow
