Got a counter offer from my current employer post resignation to my role as senior software engineer

I meant go ask for that. But here is the other factor. They know you are one foot out the door. Is the counter offer them trying to keep you on while they find your replacement.
I was also in similar situations, my organization ( also an IB) provided me an counter once I resigned. When I was there they didn't value me so now it makes no point to stay back with them. Also remember you will be valued by the organization until they find out a replacement of you. Once they have in your replacement in the team your future appraisals will be less as the would have already increased your pay during counter offer.
Whats the name of the team you will be joining? In one Data science one there is a huuuuge wave of people quitting... and for a reason. Some new VP is toxic and mentally unstable so watch out what you're getting yourself into

Why did you start to interview in the first place? Why didn’t your current employer value you until you decided to leave? People should be offended by counter offers, it means your company could’ve been paying you what you deserve the entire time but was able to fool you into a lower offer to cut costs.
Wanted to add. Go to your counter offer and ask if it’s retroactive to the date of your last promotion, if they aren’t willing to make it right, move on.
