Gap between two jobs

I got a new H1B visa and will move to another company. Can I take one week for vacation after leaving the current company but before joining the new one? Am I legal to stay in the US during the week during which I do not have a job?

Yes, you can.

I did not have any problem doing that taking a vacation for a couple of weeks. I know some people who are from India say that it can be problematic though.

60 days in total for that h1b period (3 years) or 60 days every switch?

There's a 60 day grace period that can be taken once per authorized validity period. All the days must be used consecutively - if you don't use all 60 days then the rest are forfeited. (However presumably by then you've found a new H-1B sponsor, and if the new petition is approved, then you'll be eligible for another grace period when the new job ends, as well). One key thing though: the grace period ends when your I-94 expires, even if it hasn't been a full 60 days. So, let's say your I-94 expires in 2021 and you've never been unemployed on H-1B before. Then, you'll be fine. You can take that 10 day break. However, if you're planning on travelling internationally - then it's a little more complicated.
