Gap in career?
I want to give myself 6months to complete hobby projects. I will be in job market once I am done executing my ideas. How can I address this Gap? I don't want to disclose my side hustle to limit my chances of getting hired. Don't want my future employer to think that I will not be giving my 100% and this job will be temporary until I work for success in background. Q: what dos and don't before leaving my current job. Just stay employed, WFH (a little), and do your project.
I have taken 2 breaks in my career just to spend time with my kids. Didn’t ever have to “explain” about it in the interviews. I just said I wanted to spend time with my family and we moved on to the next question. You could say something similar

If you are in California it's against the law for recruiters to ask about gaps.
Just say you signed a NDA.
