After applying to a handful of roles both actively looking to recruiters reaching out, I still haven't been able to get a callback. What can I do to give myself the most leverage when being compared to other candidates? - I currently do not have a GitHub project - I have various certifications (mostly in AWS and PaaS solutions) - 5+ years of experience TC: 187k

Depends. If top/most famous tech company, leetcode for the interview and GitHub+projects to be ready for the job. else, see what they care the most about for the interview but the GitHub+project is always important for your growth as an engineer. Passing the interview is half the battle, keep reading, learning and practicing before/during/after the job.
Also certifications are only useful where it's explicitly asked (handling customer financial stuff etc, but these will be paid by the job so no need to overthink that kind)
