Could start my new job in a week or in a month. I could backpack to Europe. But the opportunity cost is like 15k which is huge. Or I could wait a year and do the same trip and the opportunity cost would just be the cost of the trip I should also emphasize I would be going alone

I think once you are dead, opportunity cost is not applicable. Nothing will matter. All memory will be erased.
Do it now. In a year you might not have enough vacation to do it. Or you can do something else. If you earn a lot, you probably have more money than time. I would personally work for half my TC (300k) if I could work 6 months per year.

Europe by a mile. At the end what you have is memories and your impact on people and the world. A trip in Europe at this point in your life is worth so massively much more in those terms than 15k, especially at our earning potential. Don't even think twice. Go explore.
