Buy a domain and set up your own email on aws. It can be nearly free depending on how fancy you want to have that. Freedom is worth paying for.

Too be claear, this is about apps that you chose to install in your gmail account. But there's an easy workaround if you're too lazy to read the privacy disclaimer of apps that you install: Don't install any third party apps at all. Problem solved.
Translation: Google provides an API to access Gmail. This can only be done with the user's consent. Some users read the scary warning and still decide to grant consent to random apps. Unfortunately, users who read a scary message and grant random apps access to Gmail data are probably also dumb enough to give those apps the Gmail password, which is what those apps used to ask for back in the day before there was an API. In my humble opinion, such users shouldn't be allowed alone on the internet without a parent or guardian, but alas, the parent is nowhere in sight. Remember when LinkedIn asked for your email password to spam your contacts? There were plenty of users who simply gave away their password and agreed... At least with the API, the scope of damage is limited.
Wow just wow. So now you are blaming the users? You made it possible for people to make bad decisions with a single click. And when they get screwed you blame them. This is just like Microsoft who blamed users in 2000s for spyware spreading. Google is responsible for this mess because you make it easy for people to throw away the keys of their house

It's not on by default. You have to opt into it.
Google doesn't own your email data, you do. I feel like it'd be a much bigger scandal if Google arbitrarily forbids third party apps to access your data even AFTER you give permission. That'd be really disrespectful to user wishes and autonomy.
The problem is that most of the times I just use gmail as a single sign on. Many apps won't tell me that they are reading my mail just because I used my Google account to authenticate. Google has deliberately made this too simple for apps to cheat customers
Apps did tell you, it's right in the prompt you agreed to.
