I know many people on blind focus on working for these huge tech companies by the traditional recruiting process. However, I’m curious to know for those whose startups been acquired by a FANG how did that hiring process go??
Tons of folks do this. There's usually no hiring process, you just join.
Friend quit Google, joined a startup that within a year got bought by Google, and is now a Googler again, but leveled up in the process. I guess that's one way to boomerang!

I joined amazon via acquisition. They gave everyone a new contract to sign. It didn't seem like there was any option to negotiate so I just signed it. The other option was to find another job
What if you were marked as no hire at Amazon but Amazon acquires a company that you are part of. Do they fire you

Yep, joined Meta via acquisition. No hiring process, just a new offer with no negotiation entertained.
So many variables… how big is the startup, is it an acqui-hire or do they have a useful product, etc. No one size fits all answer.
