Have you tried the numerous ready spice mixes at any indian store? We don't always cook using fresh herbs. A lot of dishes can be made with the basic formula: Saute vegetables, add spices, cook some more. Then you can try making it fancy: add onions tomatoes before sauteeing spices and adding vegetables. Fancier: You'll find certain dishes have different ratios of spices. So you can boost certain spices/mix and match, and go from there
