They have clearly mentioned that they want to check technical skills, data analysis, thought process, storytelling and methodology.
I’d be careful you’re not breaching confidentiality agreements with your current company. Anyone that presents details about their current company’s research in detail is usually a red flag.
Sure, I believe discussion on methods at high-level will be sufficient.
Personally I wouldnt go as deep as showing data or plots from a current or past project of another company
