I don't like Java, but I'd pick it any day if the alternative is Go. (yes, I use both Java and Go at Uber)
If you could choose anything, what would you use
Depends a lot on the context, especially if there's a remaining codebase that is already in some language (in which case, I'd just go with it), or if there are some libraries that can be hard to find elsewhere that I'll need. If there are no constraints like that, I'd seriously consider C#. And idk if anyone really uses Kotlin for anything other than Android dev, but I'd look into it, since it looks basically like Java, but less cringe. I guess C# is kinda in the same boat.
