Should I spend time doing a project to fill out my github or just more lc questions? Do github projects help get interviews?

Github projects do very little to help even as a new grad. Internships matter more
But it doesn't hurt to have one or two if your resume looks sparse
If you think you can easily clear all codings and designs, there is no harm to have a github project. Otherwise, LC should be first priority.
Definitely leetcode to perform well. If you can do a cool/interesting project, then it’s a great differentiator. People loved when I could tell them about my crypto wallet app and the consumer insights I gained.

Leet code will help you get the job you want because you nailed the interview. Spending time on a github project will likely get you down leveled but in theory you should be a top performer and be promoted quickly assuming you drop your gh project as soon as you start.
