I have been to India and eating the local cuisine there. What I noticed is that there is a lot of butter in the food, especially curry. I am not saying Indians only eat curry, but do you think your staples food are high calorie in general? Or is this just restaurants doing their thing to make it taste better? And you guys eat healthier at home? Genuinely curious.

Yup. It probably worked fine when people ate smaller portions or worked in the fields or ate millets instead but not anymore. It’s not healthy at all since people started eating too much rice at least in the south. Most people are unaware how unhealthy it is since Indian knowledge systems traditionally rely on oral word and what your parents do. Do some research and log what you eat. Idli is a good choice for breakfast lunch or dinner doesn’t matter.
Butter is mostly present in punjabi and Rajasthani food. South has more rice which is high calories but it is not complex carbs and digests easily. Curry is badly interpreted in western countries. Curry just means mix of spices. So everything in India is curry. Indian food is non existent. There is nu such thing. For even 300kms food changes within India.

Are you eating out? Restaurants usually add a lot of butter/cream to curries to make them richer/tastier. At my home, we only use a tablespoon or two of oil and that's it.

I am an Indian, born and raised in India. I only heard word “curry” when I came to United States. What is it that you guys call a Curry?

Curry is a popular word in kerala. Meen Curry(fish curry) irachi curry (meat curry) etc. However there wasn’t a thing called curry masala, that I only heard once I came to US. Curry itself in Kerala doesn’t even mean a specific recipe.

Pouring butter into food is a restaurant/ Punjabi cuisine thingy. If you order paneer butter masala, lentils with daal etc, that's to be expected.
Home cooked food (recipes, macros and taste profile) is very different from restaurant food (which typically is Punjabi food). They just add butter to make it taste better.
