More than the H1B visa, I'm worried that OP doesn't know how much of their life savings (6 or 7 figures) they are going to pour into a business that has minimal profit margins and a category where most new businesses / restaurants go belly-up (sorry no pun intended) in less than a year.

Restaurants in the US are usually operations heavy. You can own an Indian franchise with a well established operations setup if you want to be a passive partner on H1B.
