Nice places to ride, especially those where you can freely push triple digits?
Go east
go to a track and don’t endanger others on the road.
That's what bicyclists do to pedestrians and they aren't even required to carry insurance
For triple digits go to the track, there at least three decent ones close enough for a day trip. For twisties, look up Ben Howard road and High Bridge road on the east side, Green Valley rd down in Auburn. For longer beautiful rides go to highway 20, Whidbey island, Olympic peninsula. Join PNW riders group on FB. Keep it rubber side down, happy riding
Hwy 2 to Leavenworth. Woodinville — Duvall — North Bend. Chuckanut Dr (Bellingham). Anywhere on the Olympic Peninsula. No triple digits in the above, but great rides. For triples, head to Portland. South of Olympia to Vancouver you can open it up outside of high traffic times. I-90 east from Seattle to Spokane is probably best bet for triples. Those tickets though...will ruin your day. But those elks will end your life.
Mt baker for twisties, otherwise the highway to Snoqualmie is pretty good for speed
