Quit job after getting greencard

Is that okay to quit a few weeks after getting an employment based greencard? Either to take time-off or change employer?

The law states that if an employee leaves before a 2 year window, the employee has the burden of proof that they accepted the job offer in good faith to the UNCIS. A reasonable time would be 6m-1year, but you will be under the review of the UNCIS. If after two years you leave your employer- than the UNCIS has the burden of proof to prove that you didn't accept the job offer in good faith- and it was for residency. Speak to a immigration lawyer. In today's America- you should be very very careful about these things. But weeks after a green card sounds like a bad idea.

It’s not 6 months after you receive your GC. It’s 6 months after you FILE your AOS.

Rules have changed a lot. As long as it’s 6 months AFTER you filed your AOS (filed, not approved) and you stay within the same field, you are fine.

Rules have changed. You can leave after file for 485 these days. But don't take legal advice on Blind, talk to your lawyer.
