There are people who start at a bank like Capital One and go to Amazon. My question is why would you do that to yourself? (Both Capital One and Amazon are horrible companies to work for).

Sure? Granted I've heard better things about Google than the other FAANG companies, but I've also heard things are changing there (like everywhere else it seems) for the worse. For me, to suffer through Capital One AND Amazon to get there - well, I wouldn't wish that on my worst enemy. Google might be a good place to work, but it ain't THAT good.
At least here at Stripe most of the people are from Google/Meta/AWS.
These firms are fintech and not traditional financial companies where tech is secondary and their financial business is primary.
