I’m currently on the keto diet, but I have on-site interviews coming up. Should I quit the diet so I don’t have to worry about the food/restaurant type during the interview? Or is it not a big deal to tell them and then change lunch plans?
You can give up your fad diet for a few lunches if it means $$$. You won’t die.

If you are eating Keto, and your body is fully in Ketosis, one meal that is a little heavier in carbs than normal will not pull you out of Ketosis. Pick an item on the menu that is reasonably low-carb, but don't sweat it. If you have doubts, buy a set of ketone testing strips and measure your levels regularly.
Thanks! Been on it about 1.5 months now but haven’t had any heavier carb meals so that’s good to know it won’t be that big an issue
If you haven't had carb heavy meals in a while, don't do it in the middle of the interview day. While I was in keto once I had a carb heavy meal (sugary milkshake) I felt super sleepy before I even finished the shake
Why not just eat healthy instead of following a fad diet people use to cheat their weight with

Take this as an opportunity to demonstrate your leadership skills. Right before the lunch, give your new teammates to be a pamphlet (google slide presentation is better but you might not have enough time for it) that tells the pros and cons(are there any at all??) of the keto diet. Right about the time you are finished walking them through the pamphlet, make a slight gesture to the waiter to bring the avocado with olive oil appetizer. The timing here is everything though, then the rest of the meal will follow. If you can pull this off you get a strong hire on my book for leadership and influence, rest of the interviews are just firmality. Good luck and let us know of the results.

Bring some of your own food just in case. You can usually eat the middle of a sandwich or something then supplement with whatever you brought.

Afraid of places like Indian or pizza restaurants, or with few options that are keto friendly
When I went to Indian, I'd just order saag paneer. Every Indian restaurant has it and it's mostly keto. Then, just have with very little rice or half a tava roti. Under 20g carb both combined. And most other places including many pizza ones have salads anyways. Ask dressing on the side.
