Switch to start up from FAANG

I was going through a few profile on linkedin. These guys were part of biggest companies like Apple, Google and Microsoft, which are dream for people like me. I consider those companies as retirement companies. But what motivates these guys to leave such companies and join the start ups. If I get similar chance where I have to chose one of them, what would you guys suggest?
