How do people make actually good food for themselves? Does everyone just eat chicken and rice or extremely basic meals? Making food that “tastes good” takes a significant amount of time, like 45 minutes. Not including the clean up afterwards. Also, the fact that you have to constantly buy ingredients and manage an inventory. Is there some hack that I am missing?
Get a roommate and split the load
Trader joes has a lot of pre-made meals (both frozen and not) that are great for beginners. As you get more advanced you can start making pasta recipes, egg dishes, rice dishes, stir frys, slow cooker meals, and more. All the dinners I make regularly I keep most ingredients on hand for. Cooking is one of those things that gets easier and faster the more you do it.
Cook once every 2 days- only cook meals that can go in a timed electric device like an Oven or Instapot
Find a foodie partner!
Get meals delivered. Not the restaurant kind but good catering like trifectanutrition etc…
Meal plan, make enough to have more than one meal of it (i.e. I will slow cook up some chili and it is good for 3-4 meals, or make a big batch of Bolognese sauce with a few pounds of meat). Split the work up with a significant other or roommate. Make a big batch of rice and other sides once a week so you can have that with multiple meals and only have to cook a main and maybe sautee up some veggies. Buy premade salads to go along as side dishes. Buy an air fryer, easy to quickly whip up wings, chicken tenders and reasonably healthy (non deep fried) french fries. Eat out or go out once or twice a week so you don't get bored of your own cooking.
Meal prep helps. I cook two curries on the weekend, or grill up a load of chicken breasts. Throughout the week I can just sautée it with some rice, veggies — takes me 1 hour of prep on weekend, but only 10 mins to put together a meal
My favorite things to cook I made stupid easy. I bought a ninja grill and a Japanese rice cooker. Throw some rice and water in the rice cooker, throw salmon or chicken in a ziplock bag with teriyaki sauce. After 30 min put the meat on the ninja grill with a thermometer inside, push a button. A few min later it says flip, a little later it says to remove from heat. Let rest 5 min, put rice and meat in a bowl and pour some teriyaki sauce. Optionally microwave some broccoli and throw in. Teriyaki rice bowl with about 2 min of actual work and minimal cleanup (wipe grill and rice cooker, a bowl and fork for dishes)

Ninja grill FTMFW! They seem pricey but they're so worth it. You can make bomb ass steak and burger dinners with almost no effort since it grills, bakes and air frys.
It takes 90 minutes for me to make a good meal. Luckily one of Google's perks is free food, so in WFH that means cooking in business hours. With not being the only cook at home and eating the leftovers the next day, it's doable.
