It’s really hard to be paid top of the market and have a low stress job. It’s possible but it’s really not that common. It’s usually a trade off.

Sure Meta doesn't care about your mental health but do you think a startup is going to be any different? Have you worked at a startup before? If you think startups are going to be less chaotic then you are in for a huge surprise. They are the definition of uncertainty. Forget about mental health, they are always in do or die mode. And all that for very low salary. I hope you did your due diligence before taking this step.
